Description
Thanks to its unique appearance, the Pompon blanc is also referred to as the ‘Lion’s mane’. It almost looks as though there are many tiny white hairs circling the cap. The mushroom has a sturdy structure and can grow as large as a football. The Pompon blanc tastes best at the maximum size of a tennis ball.

The flavour and texture of the Pompon blanc comes out best when softly fried in butter. Serve on a salad or as a meat alternative. This mushroom is also used for tempura, because the ‘hairs’ hold the batter so well. For tempura, slice the mushroom into four parts.
