Refined wild mushroom with a little pepper, loved by chefs. Also known as mohawk.
Description
The Dutch refer to this mushroom as the ‘cocks comb’. The mushroom has a highly refined flavour with a hint of pepper. This is the favourite mushroom among many chefs. Cantharelles are actually categorised under a different kind of mushroom. They all look and taste alike, that’s why we refer to all of them as cantharelles. The mushroom only grows wild in the forest, often near oak, beech and birch trees. Harvest season begins early in the summer and lasts until the start of fall. The supplied mushrooms have been hand-picked in areas where they thrive and grow wild.

Briefly fried on a high flame in oil or butter will best reveal the true flavour of cantharelles. Also heavenly fried with onions and garlic. Superb tasting in (cream) sauces, stuffing or ragout. Do not stew, this will turn the mushroom soft and ruin the flavour. Fried chantarelles go great with meat and fish and can also be a great basis for vegetarian and vegan dishes.
